Guatemala Joyabaj Honey
Guatemala has held a spot in our rotation from the very beginning. It was the first origin we ever bought in bulk, and it is still the backbone of our Drip blend. When we go looking for a Guatemalan single origin, we want one that stands on its own. This one does.
It comes from the Chuaquenun community in Joyabaj, up in the Quiché highlands, where 1,550 smallholder farmers deliver cherry to a wet mill built in 2021. Not every farm has a way to move its own pickings, so couriers collect through the community and bring everything in together. FECCEG represents the group and handles the technical support and organic certification behind it.
The honey process keeps the fruit close to the bean. Cherries are depulped and go straight onto raised screens, turned by hand across about a week in the sun. What lands in the cup is cherry over dark chocolate, with a nutmeg warmth on the finish.
